Animating a skeleton is Alchemy, same as animating a golem or any other construct, just made of bones. Conjuration is what covers spirits, and would most likely cover souls as well, though you haven't actually looked it up to find out. To become a lich, you would probably need to use Conjuration to put your soul in a box, Alchemy to create an animate body, and Enchantment to control that body while your soul remains safely in the box.
