Asuka is actually the one the Party always puts forward as the public face of the EVA pilots. Sure, Shinji is technically has more kills on his record and Rei actually embodies the socialist ideal more fully, but neither of them are particularly impressive at first glance, Shinji being weak and shy and Rei being, well just all kinds of creepy. Asuka on the other hand is healthy, beautiful and high-spirited. Rei, despite her self-sacrificing nature, is a genetically engineered human, which makes her anathema to the party line, as most of genetics was during much of the Soviet era, because admitting that people are born with different capabilities and predispositions undermines the egalitarian ideals of the Party. With Shinji, meanwhile, they can have all the kiddies eating out of their hands with claims that they, too, might some day be Evangelion pilots.
Considering the general theme of Soviet engineering as being cheap, utilitarian, and simple, the Soviet Evas would probably have a very stripped down look compared to the Evas we know from the show. All that armor would have to go, for one thing -- it serves no practical purpose, as it would be about as effective as tissue paper against anything that can break through an AT field, anything that can't break through would never touch it, and it wastes massive amounts of money and materials that could be used for other projects. Thus, armor would be the bare minimum needed to make the Evas look presentable. The "New People" aspect suggested early on in the thread would never fly -- it stinks of eugenics and genetics, which are both anathema to the Soviet regime -- instead, the fact that they're basically copies of Angels would probably be publicised and played up as an example of Soviet Science copying and perfecting the imperfect weapons of the enemy to use against them.

Honestly, as nice as it would be, I can't imagine the Soviet EVAs looking that much more different than their German, US, or Japanese counterparts. If only because it'd be like taking away the armor from 40k's Space Marines and trying to give them a hard-science look like Halo's Spartans. It just doesn't work out right.If anything, I'd just imagine the Soviet/Russian EVAs simply slightly block-ier shaped armor, more pronounced chest armor, and generous use of up-scaled ERA blocks. Somewhat a combination of the Super EVA and F-Type armor.
