I manage to grab a some of the nerves, the ones I didn't grab are moving around very rapidly, it's like they're like tentacles, sometimes almost hitting me.
I can't pull the nerves out like this, but I think I can hold the creature in place for some time. What should I do?

I attacked the nerves first, and the chains severed them, making the creature start flailing around it's remaining tentacles.
