What Half-Monster templates can you think of, other than Half-Dragon?

and i think theres some info in some other book about beholder eye grafts (grafting beholder eyes onto your body to use) you could use that as a base

Specifically Astral Stalker.
Otherwise Half-Bear, Half-Cyclops, Half-Doppelgänger, Half-Efreet, Half-Marut, Half-Mindflayer, Half-Rakshasa, or Half-Yuan-Ti could work.

Picturing Half-Tarrasque right now. Quite like the image, not sure how it would come about though.

Half-Beholder:
"Half-beholder" is an inherited template that can be added to any corporeal creature that is not a construct or plant (referred to hereafter as the base creature). A half-beholder has all the base creature's characteristics except as noted here.
>Size and Type: Creatures with this template become Aberrations if they are not already.
>Hit Dice: Increase to d8.
>AC: +2 natural armor bonus or the base creature's natural armor bonus, whichever is better.
>Special Qualities: Cannot be flanked, Spell Disruption.
>Spell Disruption (Su): Spells around the Half-Beholder weaken and fail. Any spells or spell-like abilities cast or targeted within 10ft of a Half-Beholder (including its own) act as if they were cast with the Caster Level reduced by one, and with a halved duration if applicable.

I think you're missing the point. Whether it's half-beholder dragon, or half-dragon beholder, it's still one half dragon and one half beholder, therefore to get a half-beholder dragon, you just apply half-dragon template on a beholder.
