Well, assuming the human was proficient with his sword, he would have to dodge t-rexes spear charge and/or bite in order to attack his flank. The T-rex has tiny arms, so his dual spears will be less useful there.
With his excessively folded steel and simian rage the human should be able to cut the beasts leathery hide.
So probably, i´d say.

I think you're overestimating how hard each bite is. You're too big to swallow whole, and with the armor it'll probably have to chomp you a couple times before you're out of the game.

You know, I actually sit in a rare house.

The house where if my guys are going after Giant wyrms and colossial beasts, I ensure to tell them OCC their little rapier +3 is getting a -5 penalty for size damage. So I often give them.

My current setting is basically Witcher meets monster hunter with a chapter of people called "Slayers" on the northern front designed to fight of Manticores, Hydras, Dire Griffins and the like.

They do so with supremely large weapons and enchanted gauntlets allowing them to swing large weapons. Because all the countries lack the man power to constantly send patroles of ill fitted soldiers to die against giant monsters because spears and arrows do jack shit.

How do I solve this for my party? An easy spell. "Enlarge Weapon" Many penis jokes are had until the rogue realised he does no damage with his tiny little stabbers.

Reflex saves vs the burst from the ground attacks.

Usually, half of the party has really big crossbows with chain grappling hooks on them, they use these for climbing and tie ups.

They usually carry climbing hooks and rope and try to make their way along the creatures body and hold on for dear life when it submerges.

Look for weak spots between the natural armor plating and, if anyone has knowledge nature and has done their research, they can find weak points to strike at.

They are usually drunk when attempting fighting huge creatures. Its all a lot of fun, much for exciting for me and them than hacking at its knees (or whatever, armor plating) until it slowly bleeds out.

Next, of course you'll say that you allow them to fly, and breath fire. But in keeping with that, you need to keep the setting internally coherent. That means special technique to take down monsters.

Also, in MH, traps exist. They work.
Poison exists. It works.

A very effective tactic in MH is to poison some monsters. Using either guns or small, usable by an actual human sword.

Arguably one of the fastest way to kill a monster in MH is to trap it, put it to sleep, then use bombs to injure and capture/kill it.

In other words, what you say is possible and effective, not to mention much better at achieving the desired result.

But there are also huge weapons, because it's just as fun.
