    What about basing spellcasting around other stats, like constitution or dexteriy? How might they work?

    For Strength, see Dragonball, life energy, etc.
    For Dexterity, art seems to get lumped in. Such as that one guy who uses paper with lines all over it that, when folded, creates runes. Or alchemy circles in FullMetal. Or dance/stance flow abilities.
    Con is blood magic, rituals of pain, etc.. Alternatively, pure defensive magic in which the user reinforces his body and uses it as a shield, weapon, etc.

    Incarnum classes, Dragonfire Adepts, and Warlocks use CON as one of their main stats, which basically amounted to "can I channel this energy without killing myself?" Fluffwise I always liked that.

    A fun custom class my DM created was based on the Corsair from FFXI; you used dice rolls to buff (or debuff, if you fail) your party members. Of course this was essentially just based in player luck, but it was actually a lof of fun to play, and I suppose if you had a system with a luck stat, you could modify your rolls with that.

    Well, this kinda limits things. After all, there are only three stats that aren't used. If we use other character attributes, like skills, or alternative mechanics, though, we might have something to go on. For instance, Leadership score (which admittedly is Charisma + level in practice) for a spirit summoner who has a vast entourage of spirits following him.

    Battle Magic, man. Their "spells" could be called meditations because they must reflect on the battle ahead in order to summon them into their retinue. They could be composed of two (or more) "Forces" or schools to branch into.

    Strength: Stone (strength of the body); Steel (adeptitude of the weapon)

    Constitution: Bone (sturdiness of the physical); Blood (hardiness of the soul)

    Dexterity: Shadow (slyness of movement); Flight (quickness of reflex)

    At lower levels, they basically apply bonuses to the ability score under certain conditions (like a fighter using a proficient or non-proficient weapon would be under Steel). At higher levels, you're basically performing crazy battlefield stunts. And they're not even really spells, just melee classes getting an edge on a scale that's far less specific and spell-like than 4e's powers.

    STR or CON based: uses Ki or some other form of body energy. Mostly concerned with self-buffs and single attacks (HADOUKEN!) but could also branch out to healing (not just self) and debuffs.

    DEX based: draws of mystic runes or symbols to work magic. Obviously, better runes mean a better spell.

    Actually when Psionics came out in 3rd edition(before Complete Psionics) you chose a stat and that corresponded with one of the "schools" of psychic powers, and that was just for the psion class. So you could be high con and be a Metabolism psion. It was actually kind of cool.
